best ovens 2014: Archaeology on the Threshold Joseph D. Wardle, Robert K. Hitchcock, Matthew Schmader, Pei-Lin Yu, 2022-12-30 New perspectives on transitions in human history This book is about transitional periods of cultural and environmental change as seen through the lenses of archaeology and ethnography. Incorporating data from across six continents and tracing the human experience from the Late Pleistocene to the present, these chapters offer a global comparative perspective on transitional states. Questions of causality are considered, as are hypotheses about the processes of cultural change. Archaeology on the Threshold focuses on major transitions such as the shift from foraging to agriculture, the adoption of new technologies, the emergence of large-scale societies, the transition from egalitarian to inegalitarian leadership, and changes that occur in socioeconomic and ideological systems as a result of climate change and disease. Theoretical approaches range from processual to postprocessual, humanistic, and interpretive. Methodologies include ethnoarchaeology, the use of ethnographic analogy, cross-cultural comparisons and large-scale data approaches, oral history, the historical record, participant observation, and focus group discussions. Challenging archaeologists to query long-held assumptions and theoretical positions, this volume aims to refocus inquiry into change-causing and larger evolutionary processes to problematize notions of revolutionary, irrevocable change. These case studies examine and shed light on assumptions regarding the linearity and oscillations of adaptations, with intriguing implications for archaeological inferences. |

Baker, 2024-10-28 Culinary Technology of the Ancient Near East discusses the technical aspects of meal preparation, cooking, and baking in the ancient Near East, exploring a wide range of topics including kitchens, cooking equipment, cooking and baking vessels, and serving and eating utensils. Chapters explore and describe the culinary technologies and techniques employed by the peoples of the ancient Near East from the Neolithic to the Early Roman period, considering their unique and pioneering contributions to the development and evolution of gastronomic devices and apparatus and highlighting some of the foods prepared by them, recognizing their application and influence in contemporary cooking and baking. Baker brings together in a single volume what is known about the culinary technology of the ancient Near East based on the archaeological, textual, historic, and scientific data drawn from a wide range of studies and discusses this data in terms of its cultural, historic, and socio-economic context. She emphasizes these technologies as the foundation upon which modern culinary technology is based and applies relevant ancient techniques to modern systems. Overall, the volume acknowledges the ingenuity of the ancient mind in order to understand their culinary technology, which in turn helps us better understand our own and apply these, and new, ideas to the present and future. best ovens 2014: Build Your Own Earth Oven Kiko Denzer, Hannah Field, 2007 Earth ovens combine the utility of a wood-fired, retained-heat oven with the ease and timeless beauty of earthen construction. Building one will appeal to bakers, builders, and beginners of all kinds, from: - the serious or aspiring baker who wants the best low-cost bread oven, to - gardeners who want a centerpiece for a beautiful outdoor kitchen, to - outdoor chefs, to - creative people interested in low-cost materials and simple technology, to - teachers who want a multi-faceted, experiential project for students of all ages (the book has been successful with everyone from third-graders to adults). Build Your Own Earth Oven is fully illustrated with step-by-step directions, including how to tend the fire, and how to make perfect sourdough hearth loaves in the artisan tradition. The average do-it-yourselfer with a few tools and a scrap pile can build an oven for free, or close to it. Otherwise, $30 should cover all your materials--less than the price of a fancy baking stone. Good building soil is often right in your back yard, under your feet. Build the simplest oven in a day! With a bit more time and imagination, you can make a permanent foundation and a fire-breathing dragon-oven or any other shape you can dream up. Earth ovens are familiar to many that have seen a southwestern horno or a European bee-hive oven. The idea, pioneered by Egyptian bakers in the second millennium BCE, is simplicity itself: fill the oven with wood, light a fire, and let it burn down to ashes. The dense, 3- to 12-inch-thick earthen walls hold and store the heat of the fire, the baker sweeps the floor clean, and the hot oven walls radiate steady, intense heat for hours. Home bakers who can't afford a fancy, steam-injected bread oven will be delighted to find that a simple earth oven can produce loaves to equal the fanciest artisan bakery. It also makes delicious roast meats, cakes, pies, pizzas, and other creations. Pizza cooks to perfection in three minutes or less. Vegetables, herbs, and potatoes drizzled with olive oil roast up in minutes for a simple, elegant, and delicious meal. Efficient cooks will find the residual heat useful for slow-baked dishes, and even for drying surplus produce, or incubating homemade yogurt. |

best ovens 2014: The Seven Ranges Will Hoyt, 2021-03-01 When Surveyor-General Thomas Hutchins drove a stake into the ground to mark a point of beginning for the 1785 establishment of Seven Ranges of townships on the west bank of the Ohio River, he had to have sensed that he was initiating something larger than a survey. After all, he was working for the newly formed United States, and the purpose of his work was to impose a grid of ideal squares on hill country to make it ready for sale--something that had never been done before. But Hutchins couldn't by any stretch of the imagination have known that the public survey system he was testing would soon extend all the way to the Pacific or that the land on which he worked would soon become the staging ground for other, similarly revolutionary innovations like strip mining, Pentecostalism, the gaming industry, and tools for emancipating multi-national corporations. In this book, Will Hoyt details the arrival and eventual impact of these eastern Ohio products, and by framing the story of their development within the story of his own decision to move from California to eastern Ohio, he secures a glimpse of our country's DNA. Readers will close this book with a firm grasp of three things: the grandeur of the American project, the extent to which that project is now at risk, and what we all must do to ensure its survival. |

best ovens 2014: The Roman Military Base at Dura-Europos, Syria Simon James, 2019-02-14 Dura-Europos, a Parthian-ruled Greco-Syrian city, was captured by Rome c.AD165. It then accommodated a Roman garrison until its destruction by Sasanian siege c.AD256. Excavations of the site between the World Wars made sensational discoveries, and with renewed exploration from 1986 to 2011, Dura remains the best-explored city of the Roman East. A critical revelation was a sprawling Roman military base occupying a quarter of the city's interior. This included swathes of civilian housing converted to soldiers' accommodation and several existing sanctuaries, as well as baths, an amphitheatre, headquarters, and more temples added by the garrison. Base and garrison were clearly fundamental factors in the history of Roman Dura, but what impact did they have on the civil population? Original excavators gloomily portrayed Durenes evicted from their homes and holy places, and subjected to extortion and impoverishment by brutal soldiers, while recent commentators have envisaged military-civilian concordia, with shared prosperity and integration. Detailed examination of the evidence presents a new picture. Through the use of GPS, satellite, geophysical and archival evidence, this volume shows that the Roman military base and resident community were even bigger than previously understood, with both military and civil communities appearing much more internally complex than has been allowed until now. The result is a fascinating social dynamic which we can partly reconstruct, giving us a nuanced picture of life in a city near the eastern frontier of the Roman world. |
