Through historical and sociological research, Rashida Z. Shaw McMahon links the fraught racial histories in American slave plantations and early African American cuisine to the performance sites of nineteenth-century minstrelsy, early-twentieth-century vaudeville, and mid-twentieth-century gospel musicals.
